I can't beat this dude in a 1-on-1 match, he's a Holy Knight with golden armor. Any tips? Ramza's a Knight/Squire mainly BTW.

Who is it? Weigraf?
I think there are two ways I've done it...the first is play as Squire, and every turn, have Ramza get as FAR AWAY AS POSSIBLE, and have him use his squire abilities that increase speed and strength; switch off which ones you use every time. After MANY ROUNDS (we're talking you want your speed/strength RIDICULOUSLY HIGH), you can go in for the kill and you should be able to finish him off in a few rounds. It's also incredible important to have Auto-potion and use ONLY HIGH POTIONS in your inventory; this way, you are healed greatly every time he attacks you.
The other option is to have the monk ability where you preemptively strike every time before your opponent attacks you...I find though, that this requires a great amount of leveling your monk to be effective, and if you are stuck where you are, stick with plan A.

If it's Weigraf here's what I did.
1 Make Ramsa a chemist with Squire as his second ability.
2 Give him auto potion with only high potions in inventory
3 move HP up is also a good idea.
4 Equipe him with your best gun.
5 SPAM the ever loving hell out of Yell! (I think that's the speed up move.)
6 Don't start attacking back untill you get multiple turns in a row.
7 Keep moving so that the Move HP up can give you additnel healing along with auto potion.
I got that stargy from Gamefaqs mostly I always tend to have Move HP up equipped. I can't recall how the second part of this fight went.
Also I'm kinda stuck myself. I need help with the first fight with that Marquese guy, i've got Cid in my party yet this vampwannabe still tromps on me.

^The second half of the fight, you have your whole party...
Wait, you have Cid for the FIRST time you fight Elmdore? On the roof? Really? How did that happen...you aren't supposed to get Cid until later?
Regardless, if you're on the roof, the best option here is to try and change to a FAST class so you can attack first...don't worry about hitting Elmdore, take out one of his assassins (Celia or Lettie), because you only need to kill one of them for the fight to be over, if my memory serves me correctly. So, faster classes do better, as well as those who have long range capabilities (Agrias' sword skill set or Gunners work well).
The hardest part about that battle comes with what I call the "Rapha, you're a dumbass" syndrome...if you have to, have Mustadio hit her with a "don't act" so that she naturally shies away from battle, otherwise, they'll take her out first and you're done for.

Sorry I worded that wrong, what I ment was the first fight with Elmdore after you get Cid (If I recall right you fight him twice after you get Cid.) As for the fight on the roof, Oh I hate that damn fight, the fricking stop spells pissed me off to no end. So Yeah IRHP you've got a nice little fight on the roof to deal with after Weigraf is defeated again.

Thanks for the tips
That's all great info but I think the Squire tactic is my only option, seeing as I am stuck here...but I still would need auto potion to make that work well...as far as the roof battle goes, I should easily win. 1-on-1 battles just throw me for a loop.
I beat this damned game on PS1 before but I am playing the PSP one now. I think its harder...

That kinda doesn't work when roughly 90% of your party is either dead, a zombie, or stoned because of Elmdore's flunkies.

^^Hm, okay. Well, I only remember there being one fight after you get Cid, unless you consider Elmdore one fight and then the after-transformation fight Elmdore too...
This is a very difficult fight. I suggest equipping Angel Rings or 108 gems to ward off some of the effects Celia and Lettie (Lede in this version of the game, I believe) have on you, and SPREAD OUT your party majorly.
Ramza should be a squire if you want him to learn Ultima...I believe Celia or Lede can be paralyzed so they can't move, but I might be thinking of the Ultima demons. Depending on whether or not you want this ability, you might want to let Orlandu loose on them first and have Ramza finish them off, biding his time until they use Ultima on him (make sure a healer is on standby to keep Ramza alive, as he needs to SURVIVE the attack to learn the skill).
It's important to have a good thief in your party, because I'm pretty sure this is the battle where you can steal the Genji armor (in the PSP version, you can't :( ), so steal from Elmdore, if you can.
Beowulf is extremely useful this round...his chicken ability is especially useful because once you lower Elmdore's brave, you'll be more likely to steal and land attacks (Elmdore is HARD to hit). Beowulf can also paralyze the assassins, if I remember correctly, and use Slow on Elmdore.
Orlandu and Agrias in combination work wonders, but I believe for this battle I might have switched out for someone who was a better thief than Agrias. I liked having Mustadio as a chemist...just keep him out of Elmdore's path, and he should be able to heal your party fine, as well as occasionally attack Celia and Lede. Auto-potion is helpful too.
So, yeah, I think Ramza, Mustadio, Beowulf, some kind of thief/monk or ninja with thief abilities, and Orlandu...Angel Rings or 108 gems (whoever will be attacking Elmdore primarily should have the 108 gems so he can't bite them with Vampire, though if this happens, holy waters cure that easily), and the others the angel rings... kill Celia and Lede, as their Ultima demon counterparts cannot utilize many of the same status effects that the women do, then have Ramza learn ultima and if you have to, make Cid come on over to finish them off...be sure to hit him with chicken and then steal from Elmdore, and keep Mustadio (or the healer of your choice) out of range of attack, but still able to heal your party. It's been a while since I played the PS version, and the PSP was easy as pie (I was ridiculously over-leveled from sidequests, and I just think the game was easier overall), but I think that should help.
Good luck.
I actually think I was a monk with squire secondary, but it was still ridiculously easy. But, anyway, just follow plan a, you should be fine.

No way, the PSP version is ridiculous compared to the PS. Okay I think at this point I just need to erease the file and start over. I don't have Beowlf, and aside from Ramza, cid, and Mustudio most of my heavy hitters are generic units and despite being at level 40ish I don't have any real speedster unitis. Hell I don't even have most of the jobs open.
The one complaint I have about FFT is how much you're expected to levle grind. As for ultima meh I've never been much of a completest I just want to see how the story ends Seeing how horribly uner prepaired I am though tells me that I'll just have to start new and get to levle grinding bah.
