I've only had ceviche twice, but it was delicious.

...assuming Taco Bell counts, I usually eat Mexican a couple times a month.

Enchiladas are by far my favorite, but nachos are really good, of course. Favorite Mexican desert--assuming it's Mexican anyway--is rice pudding, preferably with plenty of cinnamon on top.

I eat Mexican food at least once a month, though that's usually Taco Bell.

I love quesadillas, huevos y chorizo, alambre, tortas, & burritos. I like tacos with normal flour tortillas, but I'm not a fan of the trend towards "street tacos" with their bland, mealy, thin tortillas.
I'm not huge on Mexican desserts, but they're good.
My wife has a queso addiction, so we get real Mexican at least once a month, plus Taco Bell/Qdoba/Moe's trips (neither of us like Chipotle, though). She often gets Mexican with friends on top of that, too.

And remember, "I'm-a Luigi, number one!"
