Can you use a watch to determine North?

Not really. Supposedly the north star is that bright one, so that's the best I could do.

I'm familiar with the 'find north with a wristwatch' method, but I've never used it.

I wear a digital watch, so I can't do the compass trick with it.
I can tell north very easily if I'm in familiar surroundings, or if it's a clear night. Otherwise, not so much.

And remember, "I'm-a Luigi, number one!"

I can usually locate north day or night, especially if I know my surroundings. I can do it with the watch, too, but like Boo, I've never needed to.

^The only situations where I would ever conceivably have needed to know north would have been at scouting functions, and I always had a compass at those anyways.

I taught the orienteering badge at camp, so I needed to know the wacky wristwatch method and teach it to kids, but things have changed---------------kids don't wear watches no more. Have to teach them the shadow-stick method or something instead.
