I don't know about actual rarest, but, out of all the zoos I've been to, only one had an okapi, and that one is in Minot.

I've seen Mangalicas, red pandas, polar bears and giant otters. Also (not sure if they're rare) Spectacled bear, armadillos, and South American tapir.
