Easiest: Gi Nattak in FF7. One X potion or Phoenix down and the battle is over.

Hardest: All of them, if you don't level up.
Hardest whether you level up or not: Son of Sun from CT comes to mind, and I'll name some more when I think about it.

Easiest: Yu Yevon (if you get even half way around the grid you can kill him in 2 hits as long as you have your ultimate weapon)

Hardest: i would have to say ruby weapon in ff7 was a ***** so was nemisis in ffx. ummm sarevok in bg1 was extremly difficult as well (ill probably add more when i can think of them)
